Mexican Fiesta Burritos
- One 6 oz. package Farmhouse(R) Mexican Rice
- 2 Tablespoons olive oil
- 8 oz. lean ground beef (or ground turkey)
- 1 small onion, chopped
- 1/2 cup frozen corn, thawed
- One 4 oz. can diced green chilies
- One 14.5 oz. can pinto or black beans, drained
- One 14.5 oz. can diced tomatoes, undrained
- 1-1/2 cups water
- 2 cups grated cheese, mix of cheddar and jack cheeses
- Flour tortillas, warmed
- In medium skillet with cover, heat olive oil. Add ground beef (or ground turkey) and onion. Cook until meat is browned and onions are translucent. Drain off excess fat.
- Add rice, contents of seasoning packet and remaining ingredients except cheese and tortillas. Bring to a boil. Reduce heat to low-boil and cover. Cook for 25 minutes without uncovering or stirring.
- Remove from heat. Uncover and let stand for 5 minutes. Stir in grated cheese.
- Spoon rice mixture on top of warm tortilla. Fold to make into a burrito.
