Mexican Fiesta Burritos

  1. In medium skillet with cover, heat olive oil. Add ground beef (or ground turkey) and onion. Cook until meat is browned and onions are translucent. Drain off excess fat.
  2. Add rice, contents of seasoning packet and remaining ingredients except cheese and tortillas. Bring to a boil. Reduce heat to low-boil and cover. Cook for 25 minutes without uncovering or stirring.
  3. Remove from heat. Uncover and let stand for 5 minutes. Stir in grated cheese.
  4. Spoon rice mixture on top of warm tortilla. Fold to make into a burrito.
