Sarapan'S Veggie Lasagna
- Veggie Mix:
- 2 small to medium zucchini
- 1 medium crown of broccoli
- 4 cups chopped spinach
- 1/2 cup crumbled feta cheese
- 1/2 cup mozzarella cheese
- 1/4 cup chopped fresh basil
- Dressing:
- 1/3 cup italian dressing
- 2 cloves garlic
- 1/2 tbs dried oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- Assembly:
- 9 lasagna noodles
- 9 plum/roma tomatoes
- 1/2 cup mozzarella cheese
- 1.Preheat oven to 350 degrees
- 2. Put large pot of water on to boil
- 3. Cut zucchini and broccoli into bite-sized pieces. Toss the first batch of ingredients together in a large mixing bowl.
- 4. Add the ingredients for the dressing to the bowl of veggies, toss until coated.
- 5. Add lasagna noodles to boiling water, cook for about half the recommended cooking time (we don't want them overcooked once we bake them, or too dry because they started dry)
- 6. Place 3 lasagna noodles lengthwise in bottom of nonstick 13x9 pan. Place a layer of sliced tomatoes over the noodles, then a thick layer of the veggie mixtures. Repeat for a total of 3 layers, with the top-most layer being vegetable mixture. Sprinkle 1/2 cup mozzarella on top.
- 7. Bake for 35-45 minutes until veggies are tender.
