Spicy Barbecue Sauce Baked Beans
- For sauce:
- 2 tbsp canola or sunflower oil
- 1 large onion finely chopped
- 1 large garlic clove chopped
- 1-1/2 cups ketchup
- 6 tbsp molasses
- 1/4 cup Worcestershire
- 1/4 cup maple syrup
- 1/4 cup cider vinegar
- 2 tbsp chili sauce
- 1/2 cup light brown sugar
- 2 tbsp Dijon mustard
- dash of tabasco
- 1/2 tsp chipotle chili powder
- Salt & pepper to taste
- Additional ingredients for baked beans:
- 6-8 strips Niman Ranch bacon, chopped
- 1 lb Great Northern Beans, quick soaked for one hour in pot of water which has been brought to a boil, then removed from heat and covered
- For barbecue sauce, saute onions and garlic in canola oil until slightly golden. Add remaining suace ingredients, stir and simmer about 45 minutes. Makes about 3-1/2 cups
- For baked beans: Saute the bacon until almost done. Add this to sauce ingredients. Cook the beans until tender, then add enough sauce to cover, and bake at 300 3-5 hours.
