Mediterranean Wheat, Fruit And Nut Salad

  1. 1. Soak the bulgar wheat with 1 1/2 cups boiling water, covered, for 15 minutes. Fluff with a fork when done.
  2. 2. Soak apricots and raisins in boiling water for 10 minutes or until soft. Drain.
  3. 3. Toss the wheat, fruit, nuts and olive oil together. The grains of wheat should not stick together. Add more oil ff they do.
  4. 4. Add the seasoning, spices, chickpeas, parsley, green onions, mint and cheese and toss well.
  5. 5. Add the lemon juice and combine. Add more if desired.
  6. This dish will keep very well in the fridge for a few dsys.
