Kulfi (Indian Frozen Dairy Dessert)
- 1/8 teaspoon saffron threads
- 1 teaspoon cardamom seeds, ground
- 1 (14-ounce) can evaporated milk
- 1 (14 ounce) can sweetened condensed milk
- 1 cup heavy cream
- 1/2 cup unsalted pistachios, chopped
- 1/2 cup unsalted cashews, chopped
- 1/4 cup golden raisins
- 2 tablespoons honey
- 1. Microwave 2 tablespoons water in small bowl for 30 seconds, add cardamom, set aside.
- 2. In pitcher, combine evaporated milk, sweetened condensed milk, and cream; add saffron mixture stirring to combine.
- 3. Pour mixture into pop molds, until 1/3 full, add some of nuts, raisins, until mold is 2/3 full, insert sticks, freeze 2 hours.
- 4. Remove from freezer, add remaining milk mixture and raisins. Set aside remaining nuts for garnish, add rest of the mold. Freeze 6 hours.
- 5. Remove freezer, let stand 5 minutes, before removing from molds
- 6. Dip rim/tip of each pop w/honey and press reserved nuts on top.
