Kulfi (Indian Frozen Dairy Dessert)

  1. 1. Microwave 2 tablespoons water in small bowl for 30 seconds, add cardamom, set aside.
  2. 2. In pitcher, combine evaporated milk, sweetened condensed milk, and cream; add saffron mixture stirring to combine.
  3. 3. Pour mixture into pop molds, until 1/3 full, add some of nuts, raisins, until mold is 2/3 full, insert sticks, freeze 2 hours.
  4. 4. Remove from freezer, add remaining milk mixture and raisins. Set aside remaining nuts for garnish, add rest of the mold. Freeze 6 hours.
  5. 5. Remove freezer, let stand 5 minutes, before removing from molds
  6. 6. Dip rim/tip of each pop w/honey and press reserved nuts on top.
