Garden Fresh Chopped Salad
- 4 medium tomatoes or 1 pint of cherry tomatoes
- 1 english or hothouse cucumber
- 2 TBS fresh parsley chopped
- 2 TBS fresh mint chopped
- juice of 1/4 lemon
- 2 - 3 TBS of extra virgin olive oil
- sea salt & black pepper to taste
- optional: a handful of chopped watercress, capers, a dollop of homemade yogurt cheese or a sprinkle of feta
- can use a flavorful vinegar instead of lemon juice
- Roughly chop larger tomatoes or halve cherry tomatoes. Dice cucumber into 1/2 inch pieces. Chop herbs and mix with the veggies. Add lemon juice, oil and seasonings and mix well. When plated, sprinkle on feta or add a dollop of yogurt cheese if desired.
- Can hold up if made several hours in advance and also an excellent picnic salad.
