Cubby Sandwich
- 1 Baguette
- (Or bread of your choice)
- 1 Diced Red Pepper & 1 Diced Yellow Pepper
- (You can, of course pick whatever color peppers you want-- I just like these)
- 2 strips thick-cut bacon
- (or pancetta if you want to be fancy)
- 1 1/2 to 2 Packages or 8 ounces fresh-sliced deli style ham, sliced
- 1 large Vidalia onion, sliced
- 4 Garlic Cloves, chopped
- 2 Diced Granny Smith Apples
- 4 Tbs. Olive Oil
- Salt & Pepper to taste.
- Shredded Tillamook Sharp Cheddar Cheese - as much as you want
- Saute the bacon in a pan over medium heat until nearly done. Remove and a drain most but not all of the drippings. Chop up the bacon in chunks as big as you like.
- Throw in the olive oil and all the veg and fruit until soft. Season with salt and pepper to taste. Add the ham and the bacon and let the mixture cook together for a few minutes.
- Meanwhile, slice your baguette into four sections, add as much cheese as you like and let it toast in a 250 degree oven for about 5 minutes.
- Remove the bread, add a few heaping spoon fulls of the Cubby mixture and enjoy with your favorite Pinot Noir : )
