Broccoli Bisque
- 1 1/4 to 1 1/2 lb. fresh broccoli, chopped, or 2 (10 oz.) pkg. frozen chopped broccoli
- 2 (13 3/4 oz.) cans chicken broth
- 1 medium onion, quartered
- 2 Tbsp. butter or margarine
- 1 tsp. salt
- 1 to 2 tsp. curry powder
- dash of pepper
- 2 Tbsp. lime juice
- 8 lemon slices
- 1/2 c. sour cream
- 1 Tbsp. snipped chives
- Place broccoli in a large saucepan.
- Add broth, onion, butter or margarine, salt, curry powder and pepper.
- Bring to boiling. Reduce heat and simmer, covered, for 8 to 12 minutes, or until just tender.
- Place half the broccoli and broth mixture at a time in blender container.
- Cover and blend.
- Repeat with remaining broccoli mixture.
- Stir in lime juice.
- Cover and refrigerate at least 4 hours.
- Top with lemon slice, spoonful of sour cream and sprinkling of chives.
