California-Style Gnocchi
- 2 halved red bell peppers
- 1 bag fresh or frozen gnocchi
- 1 can Italian style diced tomatoes
- 1/2 cup kalmata olives pitted and chopped
- 1/4 cup goat cheese
- 2-3 sprigs (tsp.) dried greek oregano
- salt
- fresh ground pepper
- olive oil
- Preheat oven to 220 C (approx 400 F).
- Roast red peppers in broiler on medium-high, approx 10-15 minutes. Remove from broiler and let cool. When cool, remove skins and slice into 1/2 inch strips, then halve lenghtwise.
- Cook and drain gnocchi. Pour gnocci into ceramic baking dish.
- Crush 2 springs (tps.) of oregano over gnocci and toss. Salt and pepepr to taste. Drizzle with olive oil. Toss. Pour diced tomatoes over gnocchi. Place roasted pepers over tomatoes. Evenly distribute olives and cheese over peppers. Sprinkle on remaining oregano. Salt and pepper to taste.
- Cook for 15-20 minutes, or until gnocchi sizzles and cheese is browned. Cool for 5-10 minutes and serve with bread.
