Italian Style Mock Baccala
- 4 Scallions, finely chopped
- 2 Tablespoons chopped parsley
- 3 Finely Chopped garlic cloves
- 2 Tablespoons chopped basil
- 2 Teaspoon dry oregano
- 2 Teaspoons salt
- 4 Tablespoons Olive Oil
- 1 can (28oz)Chunky Style Italian Tomatoes
- 3/4 Cup of water
- 2 LBS Cod Loins
- 1 Pound dry pasta of choice.
- In a heavy and roomy saucepan, cook firts 7 ingredients on medium heat for 3 minutes. Add tomatoes and cook for a minute before adding the water.
- Reduce heat to slow and cook for an additional 15 minutes.
- At this point, start cooking one pound of pasta of choice according to package instructions.
- Cut fish into 2 inch cubes. Gently drop in tomatoe mixure and cook for 8 minutes.
- Drain pasta and divide in 4 plates. Add fish on top.
