Italian Style Mock Baccala

  1. In a heavy and roomy saucepan, cook firts 7 ingredients on medium heat for 3 minutes. Add tomatoes and cook for a minute before adding the water.
  2. Reduce heat to slow and cook for an additional 15 minutes.
  3. At this point, start cooking one pound of pasta of choice according to package instructions.
  4. Cut fish into 2 inch cubes. Gently drop in tomatoe mixure and cook for 8 minutes.
  5. Drain pasta and divide in 4 plates. Add fish on top.
