Deer Jerky
- 1 c. coffee
- 1 c. teriyaki sauce
- 1/2 c. soy sauce
- 1 Tbsp. monosodium glutamate
- 1/2 c. Worcestershire sauce
- 1/4 c. liquid smoke
- 1 Tbsp. black pepper
- 3 Tbsp. cayenne pepper
- 2 Tbsp. garlic powder
- 1 Tbsp. seasoned salt
- 3 lb. deer meat, cut into strips
- coarse ground pepper
- Mix first 10 ingredients to make a marinade.
- Soak meat, refrigerated, in the marinade overnight up to 24 hours.
- Drain well.
- Coat with coarse ground black pepper.
- Line the bottom of the oven with foil.
- Spear meat with toothpicks and hang from the oven rack.
- Set oven at 150u0b0.
- Keep oven door ajar to help the meat dry.
- (This can also be done in my dehydrator.)
