Low Fat Chocolate Mouse

  1. Preheat oven to 350u0b0. Coat a springform pan with cooking spary and line the bottom with parchment paper.
  2. Melt chocolate in Microwave or use a double boiler.
  3. Beat egg yolks until thick and pale. Gradually beat in melted chocolate. Fold in vanilla
  4. Beat white with 1/4 c confectioners sugar until soft peaks form. Fold in 1/4 of chocolate mixture, then fold in the rest
  5. Pour mixture into prepared pan. Bake for 20 to 25 minutes, till center is almost set, but still slightly jiggly.
  6. Cool in pan till room temperature, then cool in refrigerator (in pan still). Remove from pan; dust with remaining sugar before serving
