Low Fat Chocolate Mouse
- 8 oz semi sweet chocolate chunks or chips
- 8 large eggs, seperated
- 1 teaspoon vanilla
- 1/4 cup plus 2 tablespoons confectioners sugar
- Preheat oven to 350u0b0. Coat a springform pan with cooking spary and line the bottom with parchment paper.
- Melt chocolate in Microwave or use a double boiler.
- Beat egg yolks until thick and pale. Gradually beat in melted chocolate. Fold in vanilla
- Beat white with 1/4 c confectioners sugar until soft peaks form. Fold in 1/4 of chocolate mixture, then fold in the rest
- Pour mixture into prepared pan. Bake for 20 to 25 minutes, till center is almost set, but still slightly jiggly.
- Cool in pan till room temperature, then cool in refrigerator (in pan still). Remove from pan; dust with remaining sugar before serving
