Butterscotch-Pecan Cookies
- 1/2 c. butter, softened
- 1 c. sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/4 c. chopped pecans
- 1 (6 oz.) pkg. butterscotch morsels, finely chopped (food processor is necessary for this)
- Cream butter; gradually add sugar, beating until light and fluffy. Add egg and vanilla; beat well. Combine flour, baking powder, soda, and salt; add to creamed mixture, mixing well (batter will be stiff). Stir in the pecans and chopped butterscotch morsels.
- Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake at 350 degrees for 15-18 minutes. Remove from cookie sheets; cool completely on wire racks. Yield: 5-6 dozen
