Seminole Style Fried Frog Legs

  1. Preheat oven to 150 degrees F. ( for keeping warm until serving )
  2. In a bowl combine the beaten eggs and milk. Use more milk if needed to form a batter which resembles a very thick cream. Add cornmeal, salt and pepper, and whisk until smooth.
  3. Wash and dry the frog legs. Sprinkle with salt and pepper and dip thoroughly into batter until completely covered.
  4. In a large skillet heat about 1/2 inch of oil and fry the frog legs until golden brown on all sides. Keep the cooked frog legs on a paper towel lined baking sheet in 150 degree F oven until ready to serve.
  5. Cajun Sauce: optional:
  6. 1/4 cup cider vinegar, 1 tablespoon Tabasco or other hot sauce, 2 beaten egg whites, 1 small can tomato paste, 3 teaspoons brown sugar, Combine and salt to taste. Store in fridge.
  7. Serves 4 to 6
