Paleo Fried Eggs Over Green Chili Burgers
- 4 poblano chiles or 1 small can diced green chiles
- 1 pound ground bison
- 1/2 cup finely chopped cilantro
- 1/4 cup finely chopped onion
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt (optional)
- 4 fried eggs
- Optional garnishes: avocado and lettuce
- If using poblano chiles, cut the chiles in half lengthwise and discard seeds.
- Place halves, skin sides up, on a foil-lined baking sheet and broil until blackened, 5-10 minutes, Place in a plastic bag; seal.
- Let stand 15 minutes. This will loosen the skin so it is easier to peel off.
- After peeling, discard skins and roughly chop the chiles.
- In a bowl mix diced chiles with meat, cilantro, onion, spices and salt. Form into burgers and grill.
- While the burgers are grilling, try the eggs. Serve the fried eggs on top of the burgers. It you like, garnish with avocado and lettuce.
