Meatballs
- 1 lb. very lean ground beef (ground London Broil is excellent and very low-fat)
- 1/4 c. skim milk
- 2 slices bread
- 1 egg white
- 1/4 tsp. salt
- 1/2 tsp. crushed thyme
- 1/2 small onion, chopped
- 2/3 can beef broth (soup)
- 1/4 c. water
- pepper
- 1/4 c. plain yogurt
- 1 Tbsp. cornstarch
- mushrooms (optional)
- Soak bread in milk and combine with egg white.
- Mix in ground beef, salt, thyme and onion.
- Shape into 1 1/2-inch meatballs and bake for 30 minutes at 375u0b0.
- (You may cool and freeze meatballs for later use.)
- Combine beef broth, water, ground pepper, yogurt and cornstarch in skillet.
- Heat until thick.
- Add meatballs and mushrooms, if desired.
- Cook until meatballs are heated through. Serve over rice.
- Serves 3.
