Crock Pot: Beverly'S Healthy Crockpot Chicken Creole
- t 1/2 to 3 lbs. chicken thighs or breasts, skin removed
- t cup chopped celery
- t red bell pepper, sliced
- t green bell pepper, sliced
- t medium onion, sliced
- t can (4 ounces) sliced mushrooms
- t can (14.5 ounces) tomatoes
- t teaspoon garlic powder
- t packages sugar substitute
- t teaspoon Creole or Cajun seasoning blend
- t/2 teaspoon ground paprika
- talt and pepper to taste
- touisiana hot sauce or Tabasco, to taste
- t hot cooked rice
- Place chicken in bottom of crockpot. Combine remaining ingredients, except rice, and add to crockpot. Cook on HIGH 4 to 5 hours or on LOW for 7 to 8 hours. Spoon Creole chicken mixture over hot cooked rice.
