Bacon Spinach Quiche
- Crust:
- 1 1/2 Cups Whole Wheat Flour
- 1/2 Cup Vegetable Shortening
- 2/3 tsp salt
- 4-8 TB ice water
- Filling:
- 1 TB olive oil
- 1 TB garlic, minced
- 1 cup chopped onion
- 4 eggs
- 1 1/2 cups skim milk
- 1 10oz box frozen chopped spinach (thawed and drained)
- 1 tsp mustard
- 1 tsp chili powder
- 1 TB italian seasoning
- 1 tsp ground black pepper
- 1 cup shredded low fat or fat free cheddar cheese
- 1 cup shredded low fat or fat free mozzarella cheese
- 1/4 - 1/2 cup crumbled bacon
- Crust:
- In a mixing bowl, mix flour and salt, cut in shortening and mix until pea-sized. Add ice water by the tablespoons until dough holds together. Form a ball and roll out. Lay into a 9" pie pan.
- Preheat Oven to 350 degrees.
- Filling:
- Saute chopped onion and garlic in olive oil until onion is translucent. Add thawed spinach and saute for 1 minute. Remove from heat.
- Beat 4 eggs in a medium mixing bowl. Gradually beat in milk. Add mustard, italian seasoning, black pepper.
- Sprinkle half the cheeses onto the bottom of the crust, add in spinach mixture, pour egg mixture over top and sprinkle remaining cheese.
- Bake in oven for 50-55 minutes or until egg is set and knife comes out clean.
- EAT! :D
- Approximately 300 Calories per serving.
