Greek Salad
- 4 firm ripe tomatoes, coarsely chopped
- 3 cucumbers, seeded and sliced
- 1 green bell pepper
- 1 red onion-sliced into rings
- 1/2 cup extra virgin olive oil
- 1 cup black olives, pitted and sliced
- 1 lemon
- 1/4 teaspoon sea salt
- 3 teaspoons fresh minced garlic
- 2-4 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon freshly ground black pepper
- 250g feta cheese-cut into small cubes
- PLACE the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine. PLACE the salad ingredients in a large bowl. POUR the dressing over the salad and toss gently to combine just before serving. Garnish the Greek salad with a little freshly ground black pepper.
