Grilled Lemongrass Chicken #2
- Marinade:
- 2 shallots minced
- 3 plump cloves garlic minced
- 2 stalks lemon grass (cut off stem end and top from where it starts to branch out)
- juice of 1/2 lemon (about 2 tbsp)
- 3 tbsp mushroom soy sauce (Healthy Boy brand is best)
- 2 tbsp fish sauce (also recommend Healthy Boy brand)
- 1 tsp ground black pepper
- 1/3 cup honey
- 2 tbsp canola oil
- 3 lbs boneless breast of chicken
- Pound chicken to flatten slightly, marinate in flat container or zip-loc bag for 1-4 hours. I find its easier to combine all marinade ingredients in the Cuisinart for mincing, but the lemon grass does need to be pounded and chopped a bit before adding. Grill about 10 minutes total.
