Summer Tomato Salad
- Fresh Heirloom Tomatoes-2 each, sliced thin
- Fresh Teardrop Tomatoes-1/2 carton, halved
- 1 oz. Shaved red Onion
- 1 oz. fresh Mozzarella,chopped small
- 1/4 c. Chili oil
- 1/4 c. Basil oil
- 3 T. Red wine vinegar
- Kosher Salt and fresh ground black pepper to taste
- 1.) First start by preparing the tomatoes. You want the thinly slice the heirloom tomatoes to about 1/4 inch thickness. This will help absorb the flavors easily. Then cut the teardrop tomatoes in half.
- 2.) In a small bowl, combine the oils and vinegar and stir to combine.
- 3.) Add the tomatoes and mozzarella to the bowl with the oils and vinegar. Toss to mix.
- 4.) Season lightly with salt and pepper to taste.
- 5.) Serve on chilled plates for service.
