Sausage Chipotle Chili
- 2 Tbsp Sunflower oil
- 1 large onion, peeled and chopped
- 1 carrot, chopped
- 1 red bell pepper, seeded and chopped
- 4 garlic chopped cloves
- 1 pound lean ground beef
- 1 pound pork sausage meat
- 2-4 tablespoons ground chipotle chili
- 1 tablespoon cocoa
- 1 Tbsp freshly ground coffee
- 1 teaspoon cumin
- 19-ounce tomatoes, undrained
- 19-ounce red kidney beans, rinsed and drained
- 14-ounce black beans (optional)
- 1 cup dark ale
- 1 cup salsa
- salt and pepper
- Heat the oil in a large pot set over medium-high heat.
- Saute the onions for a few minutes, until they soften. Add the red pepper, carrot, and garlic, and cook for another minute. Add the sausage meat and beef, stirring and breaking up any lumps, and cook until it's no longer pink.
- Add the coffee, chili powder, cocoa, and cumin, and cook for another minute. Add the tomatoes, beans, ale, and salsa, and bring the mixture to a simmer. Reduce heat to low and simmer for about an hour.
- Keep it covered if it's thick enough for your taste - if it seems thin, leave the lid off so that the excess liquid can evaporate.
