Grandma'S Greek Spinach Pie

  1. Heat oven to 400 degrees.
  2. LIGHTLY grease 8x12 pan with olive oil.
  3. Dough :
  4. 3 cups all purpose flour
  5. 1 cup warm water
  6. 2 tablespoons of oil
  7. 1/2 teaspoon oregano
  8. Dash of salt
  9. Mix ingredients; knead for about 2-3 minutes; adding flour to until it doesn't stick to the hands - separate into 3 equal parts
  10. Filling :
  11. 1 lb. of thawed chopped frozen spinach
  12. A couple of chopped green shallots (can replace with 1/3 white onion)
  13. 1/2 cup finely chopped parsley
  14. Add a pinch of Salt, pepper and thyme
  15. Mix ingredients
  16. Assembly :
  17. Roll out the 3 dough balls - so that each one is a bit bigger than your 8x12 baking pan - the amount of dough, for that size will give you the right thickness
  18. Place the first layer on the greased pan, with ends hanging over the pan rim - add half the filling
  19. Follow on with the second dough layer -add the rest of the filling
  20. Finish off with the last dough layer; fold the dough layers together
  21. Pierce a few holes, making sure you go through the second layer of dough
  22. Bake for 45 mins. at around 400F.
