Hamburger Soup
- 1 pound Ground Chicken
- 1 onion, chopped
- 3 stalks Celery, sliced
- 3 Carrots, sliced
- 1 Green pepper, chopped
- 1 Zucchini, diced
- 28 ounces Tomatoes, canned
- 14 ounces Chick peas or other beans, canned (rinsed and drained)
- 2 tablespoons Tomato paste
- 3 cups Chicken Stock
- 2 tablespoons Oregano and/or Basil (Herbs de Provence)
- 3 cloves Garlic
- 1/4 cup Rice or Barley
- 1 teaspoon Pepper, ground
- 1. Brown the meat in a large pot with a little Olive Oil. Add onions, and Garlic and cook until onions are soft.
- 2. Add celery, green pepper and carrots and cook for about 5 mins. Add Herbs
- 3. Add zucchini, tomatoes, stock and tomato paste and stir. then add beans if using.
- 4. Bring mixture to a boil, add rice and then simmer for 20 minutes or so and you are done....add salt and pepper to taste.
