Pasta Vodka
- 2 chicken boneless, skinless chicken breasts (cut into bite size chunks)
- 2-3 ounces of sliced proscuitto (cut into strips)
- 1 medium onion, (chopped)
- 2 cloves garlic, (minced)
- 3 Tbsp butter
- 1 Tbsp olive oil
- 1/2 cup vodka
- 1/2 cup whipping cream
- 1/2 cup sliced black olives
- Black pepper to taste
- 1 tsp parlsey flakes (or more if fresh)
- 1/2 cup shredded parmesan
- 12 ounces of penne pasta (or such)
- Saute onion and garlic until soft. In a separate pan, brown chicken pieces
- and crisp proscuitto. Mix meat and olives in with onions and garlic. Bring heat to
- med-high. Add vodka and ignite. Bring heat to low. After flame dies out,
- add cream. Simmer for 15-20 minutes. Add pepper and
- parlsey. Combine with cooked pasta and shredded parmesan.
