Rustic Bread And Tomatoe Salad
- 1 day old baguette or ciabatta loaf
- 12 calamata olives pitted (I usually slice these in half lengthwise)
- 1/2 red onion thinly sliced
- 1 cucumber peeled and thinly sliced
- 2 large tomatoes chopped to bite size -or - 2 cups of cherry tomatoes halved
- Chopped fresh basil
- Salt and pepper to taste
- Asiago and parmesan cheese
- Red wine vinegar
- Balsamic vinegar
- Olive oil.
- SALAD MIX
- Place tomatoes in a bowl add salt and pepper to taste and let sit to juice
- Add cucmbers ,onions ,olives basil toss and let sit
- Add 4 tbls rwv
- add 2 tbls bv
- add 1/2 cup olive oil
- toss and let sit
- BREAD
- Cut baguette into bite size pcs.
- In frying pan add butter and olive oil and fry pcs of bread to almost toasted.This may take 2 or 3 batches.While frying throw in salt pepper and some parmesan for extra flavor.
- Let bread cool.
- Toss into salad mix.
- Add salt and pepper to taste.
- Proved some asiago and parmesan for garnish.
