Chicken Parmesan

  1. Pound chicken breasts until about 1/4-inch thick.
  2. Combine eggs, salt and pepper.
  3. Dip chicken into egg mixture, then crumbs. Heat oil in frying pan.
  4. Brown chicken on both sides; remove to shallow baking pan.
  5. Pour excess oil from frying pan, then add tomato sauce, basil and garlic powder.
  6. Heat to boiling; simmer 10 minutes or until thickened.
  7. Stir in margarine.
  8. Pour over chicken; sprinkle with Parmesan cheese.
  9. Cover.
  10. Bake at 350u0b0 for 30 minutes; uncover.
  11. Place Mozzarella over chicken.
  12. Bake 10 minutes longer or until cheese melts.
  13. Makes 6 servings.
