Cranberry Orange Bread
- 2 cup all purpose flour
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon himalayan or sea salt ground
- 1 cup turbinado raw sugar
- 1 egg
- 1/2 cup orange juice
- grated rind of 1 orange
- 2 tablespoons melted butter
- 2 tablespoons hot water
- 1 cup raw whole cranberries
- 1 cup coursely chopped walnuts
- Combine flour baking powder, soda, salt & sugar in a large mixing bowl; set aside. Mix beaten egg with orange juice, rind, butter & hot water. Fold flour mixture into egg mixture until blended. DO NOT BEAT. Gently fold in cranberries and nuts. It will be goopy- as long as it is is all mixed in, that's fine.
- Spoon into greased 9x5x3 baking pan and pat into place so it fills the pan.
- Bake at 325 degrees for 60 minutes. Test in center with wooden pick.
