Chilli & Bell Pepper Jam

  1. Combine the chopped chillies & bell peppers in a saucepan, along with the apple juice & cider vinegar. Bring to a gentle boil and simmer for 30 minutes until they are softened.
  2. Drain out the vinegar and set it aside. Put all the peppers into a food processor and blitz until a smooth puree is formed.
  3. Strain out the skins and seeds from the puree by passing it through a strainer.
  4. Add the mixture back into the saucepan, add the vinegar mixture, sugar and salt, and again simmer for 1 hour or until the mixture has reached a jammy consistency.
  5. Allow the mixture to cool. Transfer into glass jars & ENJOY!!
