Bro. Dale'S Delicious Vegetable Soup
- roast
- 1 whole onion
- 1 c. broccoli
- 1 stalk celery
- 2 bell peppers
- 2 cans corn
- 2 cans green beans
- 2 cans carrots
- 1 can peas
- 1 Tbsp. Heinz 57 steak sauce
- 1 Tbsp. A. 1. steak sauce
- 1 Tbsp. Tabasco sauce
- 1 tsp. Worcestershire sauce
- salt and pepper to taste
- 2 cans tomato sauce
- 1 can tomato paste
- 1 clove garlic
- 6 potatoes, peeled
- Put a big pot on the stove; chop a roast into 1-inch squares. Trim fat from meat.
- Put fat in another pot and cook down; drain juice and save.
- Discard the fat.
- Put meat squares into the large pot and brown; add small amount of water and simmer.
- Microwave onion (do not cut) in a bowl of water for 5 minutes; puree onion and set aside.
- Microwave broccoli in water; puree and set aside. Microwave celery in water; puree and set aside.
- Microwave bell peppers in water; puree and set aside.
- In large pot, drain into meat, juice only of corn, green beans, carrots and peas.
- Add Heinz 57 steak sauce, A. 1. steak sauce, Tabasco sauce, Worcestershire sauce, salt and pepper to taste, tomato sauce and tomato paste into the water.
- Chop garlic into soup mixture; let simmer.
- Peel potatoes and chop into bite size pieces and add all vegetables (canned, pureed and potatoes) into mixture.
- Cook until potatoes are tender.
- Serve with saltine crackers on a cold winter day.
