Grilled Mediterranean Chicken & Red Pepper Sandwic

  1. Get grill ready. Heat and grease with oil.
  2. While grill is heating,
  3. Slice bocconini cheese
  4. into 3 pieces per ball.
  5. Tear off leaves of basil for 2 sandwiches.(4-6 leaves for each)
  6. Slice and seed red pepper into quarters. Brush with olive oil.
  7. Grill red pepper on BBQ until outer skin is nicely grilled (2-3 min per side) Remove red pepper from grill.Let rest a few minutes. Slice into strips.
  8. Assemble sandwiches for grill. Brush both sides of bread with oil. Drizzle a little balsamic vinegar on the inside of each piece of bread. Layer sliced Mediterranean chicken breast, grilled red pepper strips,basil leaves, and bocconini cheese. Season with salt and freshly cracked black pepper.
  9. Grill sandwiches on each side until nice grill marks appear and chesse melts slightly (2-3 min per side).
  10. Slice each hearty sandwich in half. For a main course serve with a nice side salad such as greek,or mixed greens with feta cheese dressing.
  11. Enjoy!
