Cranberry Oatmeal Cookies
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup margarine
- 1 large egg - optional (As I learned you can leave the egg out of a lot of cookie/cake recipes)
- 1/2 Tsp. vanilla extract
- 1/2 Tsp. cinnamon
- 1/2 Tsp. baking soda
- 1/2 Tsp. baking powder
- 1/4 Tsp salt - Optional
- 1 cup all purpose flour
- 1 1/2 cup quick cooking oats
- 3/4 cup dried cranberries (I used sweetened dried cranberries)
- 1 cup chopped pecans
- 1 to 1 1/2 cup raisins
- Note: You can replace the margarine with 1/2 to 1 cup banana.
- Preheat oven on 300 degrees.
- In a bowl mix togther margarine (or banana, whichever you choose) and sugars. Add in egg and vanilla.
- In another bowl, mix togther the dry ingredients. Blend dry ingredients into wet ingredients.
- Add oats, cranberries, pecans, and raisins, mix well with a spoon.
- Spoon onto cookie sheet.
- Bake for 12 to 15 minutes.
