Turkey Joes
- 2 T. olive oil
- 1 1/2 lbs. ground turkey (dark meat)
- 1 onion
- 1 large jalapeno
- 1 1/2 - 2 t. salt
- 1 t. pepper
- 1-2 cloves of garlic
- 2 T. chili powder (more to taste)
- 1/2 t. cumin
- 1/2 t. dry mustard
- 1 t. smoked paprika
- 1/4 t. cayenne
- 4 T. tomato paste
- 3 - 4 T. ketchup
- dash or two of Worcestershire sauce
- dash of sricha
- 1 1/2 cups chicken broth
- 1/2 cup grated cheddar
- good buns
- butter for buns
- heat olive oil, add turkey
- dice onion and pepper, add to browning turkey
- mince or press garlic, add to turkey
- continue until turkey well cooked and onions and peppers translucent
- add seasonings and spices
- add tomato sauce and ketchup
- stir well together at medium heat, lower heat if needed
- add broth in batches to keep mixture from getting too thick
- add cheese, stir in well
- continue to add broth as necessary
- let cook for about 15 to 20 minutes to let flavors combine
- lightly butter and toast soft buns or rolls
- serve
