Molded Spinach Salad

  1. Defrost spinach; squeeze dry.
  2. Soften gelatin in 1/2 cup cold consomme, heat remaining consomme. Add heated consomme to gelatin mixture and chill until partially congealed.
  3. Add eggs, mayonnaise and seasonings to spinach, then fold into gelatin mixture. Pour into a 4 cup fluted mold, or 8 individual molds. Chill until set.
  4. Unmold 4 cup mold on serving plate and garnish top with egg slices to form flower petals. (May use a cream cheese ball as center of flower.
  5. For individual moldsm unmild on a leaf lettuce leaf.
