Molded Spinach Salad
- 2 pkgs. (10 oz.) frozen spinach
- 2 envelopes unflavored gelatin
- 1 can (10 1/2 oz.)beef consomme
- 4 hard cooked eggs, diced
- If placing in one 4 cup mold - 1 extra hard cooked egg to be sliced lengthwise in 8 slices and used for garnish
- 3/4 cup mayonnaise
- 1 tsp salt
- 2 TBS fresh lemon juice
- 3/4 TBS Worcestershire Sauce
- dash tabasco
- Defrost spinach; squeeze dry.
- Soften gelatin in 1/2 cup cold consomme, heat remaining consomme. Add heated consomme to gelatin mixture and chill until partially congealed.
- Add eggs, mayonnaise and seasonings to spinach, then fold into gelatin mixture. Pour into a 4 cup fluted mold, or 8 individual molds. Chill until set.
- Unmold 4 cup mold on serving plate and garnish top with egg slices to form flower petals. (May use a cream cheese ball as center of flower.
- For individual moldsm unmild on a leaf lettuce leaf.
