Kale Salad
- 1 head of kale
- juice of 1/2 lemon
- pinch of salt
- 1 tsp of olive
- Dressing
- 1/2 avocado
- 2 tbsp extra-virgin olive oil
- 2 tbsp apple cider vinegar
- juice of 1 lemon
- 1/2 tbsp maple syrup
- Toppings
- 6 dried figs (or fresh figs)
- 3 tbsp hemp seeds
- 1/2 cup pecans, chopped (optional)
- pinch of black pepper
- 1.Rinse kale leaves and use a salad spinner to spin dry or pat dry
- 2.Remove stems and veins from each leaf and cut leaves into small strips and place in bowl.
- 3.Add lemon juice, salt and olive oil to leaves and massage thoroughly with hands.
- 4.Set aside
- 5.Place all dressing ingredients in a blender or food processer and mix until well combined.
- 6.Toss kale leaves with dressing. Add a little at a time so you don't overdress.
- 7.Chop figs into small pieces and add to salad.
- 8.If using nuts add to salad.
- 9.Sprinkle with hemp seeds
- 10.Add a twist of ground black pepper
- 11.Give it a light toss and serve
