Mocha Pound Cake
- 2 c. sifted cake flour
- 1 1/4 c. sugar
- 1 Tbsp. instant coffee
- 1 tsp. salt
- 1/2 tsp. cream of tartar
- 1/4 tsp. baking soda
- 2/3 c. shortening
- 1/2 c. water
- 1 tsp. vanilla
- 3 eggs
- 2 (1 oz.) sq. unsweetened chocolate, melted
- Sift together the cake flour, sugar, coffee, salt, cream of tartar and baking soda.
- In a large bowl, combine the shortening with the flour mixture.
- Add water and vanilla and mix until flour is dampened.
- Beat vigorously for 2 minutes.
- Add eggs and melted chocolate.
- Beat 1 minute longer.
- Pour into greased and lightly floured tube pan.
- Bake at 325u0b0 for 45 to 50 minutes.
- Can also be baked in a loaf pan for 65 to 70 minutes.
- Cool in pan about 10 minutes.
- Remove to wire rack and sift with confectioners sugar when completely cooled.
