Classic Beef Stroganoff

  1. Slice meat across the grain about 1/4 inch thick. small sliced strips.
  2. In large skillet over moderately high heat, heat 1 Tablespoon of the butter with the salad oil until foamy. Add mushrooms and onion and cook quickly, stirring often until brown. Remove mushroom mixture from pan with slotted spoon and reserve.
  3. If needed, add another 1 Tablespoon butter to pan. Add strips of meat and cook over high heat, turning meat and shaking pan just until meat browns. Remove pan from heat; stir in mushroom mixture, salt, worcestershire sauce, paprika,white pepper, and sour cream.
  4. Return to low heat, stirring constantly. Cook just until sauce is heated through, about 2 minutes; do not let boil. Sprinkle with parsley for color if you like.
