Spicy Butter Chicken

  1. Heat in a pan :
  2. 2 tbsp butter
  3. 1 onion, diced
  4. When onion starts to brown, add the whole spices :
  5. 1 cinnamon stick
  6. 1 black cardamom
  7. 5 black peppercorns
  8. 2 cloves
  9. 1/2 tsp cumin seed
  10. When onions have browned, add powder spices :
  11. 2 Tbsp corriander powder
  12. 1/2 tsp tumeric powder
  13. 1/2 tsp chili powder
  14. 1 tsp garam masala
  15. salt
  16. 1/4 cup water
  17. When water boils off, set aside basic curry sauce
  18. Mix together, then bake in oven until chicken is done (1-1.5 hrs)
  19. 1 kilo chicken thighs, cubed
  20. 1/2 cup yogurt
  21. 6-8 Tbsp tomato paste
  22. 1+ tsp garlic paste
  23. 1 tsp ginger paste
  24. basic curry sauce
  25. Serve with naan and basmati rice, garnish with fresh chopped coriander.
