Veggie Quesadillas

  1. Spray pan with cooking spray and heat.
  2. Add all veggies except jalepenos and green onions and cook until tender, about 3-5 minutes.
  3. Salt and pepper to taste.
  4. Heat grill (or another frying pan) and spray with cooking spray.
  5. Place tortilla in pan and fill one side with about 1/2 cup of veggies.
  6. Sprinkle with cheese, jalepenos and green onions and fold empty half over.
  7. Grill for aproximately 45 seconds to 1 minute, depending on heat.
  8. Flip and grill other side.
  9. Remove from pan and cut.
  10. Serve with salsa and sour cream if desired.
