Pear Relish(Very Good)
- 8 c. ground pears
- 2 c. ground onion
- 6 green bell peppers, ground
- 6 red bell peppers, ground
- 2 small hot peppers (red)
- 1 medium jar chopped pimentos
- 4 ground pickles (sweet, dill or bread and butter; I use dill)
- 3 tsp. dry mustard
- 1 qt. red wine vinegar (you can use any wine vinegar)
- 1/4 c. all-purpose flour
- 1/4 tsp. turmeric
- 1/2 Tbsp. salt
- 1/2 tsp. ginger
- 2 c. sugar (1 1/2 white and 1 1/2 brown)
- Remove seed from all fresh peppers.
- Mix all ingredients and stir well.
- Bring to a rolling boil over medium-high heat.
- Cook 25 minutes.
- Have hot sterilized jars ready.
- Pack relish in hot jars and seal.
- Process 5 minutes.
- Makes 7 pints.
