Easy Beef Stew With Rice
- 2 Tbsp. oil
- 1 lb. boneless beef chunks, cut into thin strips
- 1 large onion, coarsely chopped
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (14 1/2 oz.) can stewed tomatoes
- 1 (4 oz.) jar sliced mushrooms, drained
- 1 c. beef broth
- 1 c. frozen sliced carrots, thawed
- 1/2 tsp. garlic powder
- 2 c. Minute rice (uncooked)
- Heat oil in large skillet.
- Add meat and onion; cook and stir until meat is browned.
- Sift flour, salt and pepper.
- Stir in tomatoes, mushrooms, broth, carrots and garlic powder.
- Bring to boil.
- Reduce heat to low; cover and simmer 10 minutes. Meanwhile, prepare rice as directed on package.
- Serve stew over rice.
- Makes 4 servings.
