Carrot-Pineapple Loaves
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground ginger
- 1/2 tsp. baking powder
- 3 large eggs
- 1 c. vegetable oil
- 1 1/2 c. sugar
- 2 c. shredded carrots
- 1 can (8 oz.) crushed pineapple, drained
- 1 c. chopped pecans
- Preheat oven to 350u0b0.
- Grease and flour 4 small loaf pans or 2 large pans.
- In a large bowl, stir together flour, baking soda, salt, ginger and baking powder.
- In large mixer bowl at medium speed, beat eggs and oil until well blended.
- Add sugar and continue beating until mixture is thick.
- On low speed beat in carrots and pineapple.
- Add flour mixture and stir until moistened.
- Stir in nuts.
- Bake 50 minutes until wooden pick inserted in center comes out clean.
