Carrot-Pineapple Loaves

  1. Preheat oven to 350u0b0.
  2. Grease and flour 4 small loaf pans or 2 large pans.
  3. In a large bowl, stir together flour, baking soda, salt, ginger and baking powder.
  4. In large mixer bowl at medium speed, beat eggs and oil until well blended.
  5. Add sugar and continue beating until mixture is thick.
  6. On low speed beat in carrots and pineapple.
  7. Add flour mixture and stir until moistened.
  8. Stir in nuts.
  9. Bake 50 minutes until wooden pick inserted in center comes out clean.
