Fried Rice With Kale And Scallions

  1. cut kale in half lengthwise and then cut crosswise into very thin ribbons ( chiffonade).
  2. steam kale for 7 mins.
  3. meanwhile, heat veggie oil in a large saucepan over medium low heat and add garlic and cook stirring for 2 mins... don't brown it
  4. raise heat to medium and add the steamed kale and scallions and edamame and carrots
  5. cook for 2 mins, then add rice and cook for another 2 mins
  6. add soy sauce and cook for 30 secs more
