Fried Rice With Kale And Scallions
- 1/2 pound kale ( 1/5 cups) ... discard stems-- cut in chiffonade
- 1.5 Tablesp. veggie oil
- 3 cloves garlic, peeled and very finely minced
- 3 large scallions, cut into 1/8 inch diagonal slices
- 2 and a 1/2 cups cooked brown rice
- 2 Tablespoons soy sauce
- matchstick carrots and edamame
- cut kale in half lengthwise and then cut crosswise into very thin ribbons ( chiffonade).
- steam kale for 7 mins.
- meanwhile, heat veggie oil in a large saucepan over medium low heat and add garlic and cook stirring for 2 mins... don't brown it
- raise heat to medium and add the steamed kale and scallions and edamame and carrots
- cook for 2 mins, then add rice and cook for another 2 mins
- add soy sauce and cook for 30 secs more
