Afro-Thai Crazy Collard

  1. In a large heavy pot heat oil
  2. Add chicken and begin to brown
  3. Add chopped onion
  4. Add tomatoes
  5. Season again with another pinch southwest seasoning
  6. Add broth and bring to boil
  7. Add black-eyed peas
  8. Reduce and simmer about 50 minutes till beans soften
  9. Stir every 10 minutes. I gently smashed a few tomatoes and beans about half way.
  10. Add curry pasted and stir well
  11. Add water
  12. Add collard a little at a time and cover allowing each addition to shrink. Stir well bringing the beans and broth to the top.
