Easy Garden Vegetable Pie
- 2 c. chopped fresh broccoli or sliced fresh cauliflowerets, or 10 oz. pkg. frozen broccoli or cauliflower, thawed and drained
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 c. shredded Cheddar cheese (about 4 oz.)
- 1/2 c. milk
- 3/4 c. Bisquick baking mix
- 3 eggs
- 1 tsp. salt
- 1/4 tsp. pepper
- Heat oven to 400u0b0.
- Lightly grease pie plate (10-inch).
- Cook broccoli or cauliflower until almost tender.
- Drain thoroughly. Mix with onion, green pepper and cheese in pie plate.
- Beat remaining ingredients until smooth.
- Pour into pie plate.
- Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes.
- Let stand 5 minutes before cutting.
