Hawaiian Haystacks
- 4 c. seasoned chicken broth
- 1/4 c. cornstarch
- 2 to 3 c. cooked and cubed chicken or turkey
- 4 c. hot cooked brown rice
- 4 medium tomatoes, chopped
- 1 (10 oz.) pkg. frozen petite peas, thawed
- 5 stalks celery, finely diced
- 1 to 2 green peppers, chopped
- 6 to 8 green onions, sliced
- 1 (8 oz.) can unsweetened crushed pineapple
- 1/2 c. slivered almonds or sunflower seeds
- 1/2 c. shredded coconut
- 1 c. raisins
- 1/2 c. water chestnuts, sliced
- 1 to 2 c. Chinese noodles (optional)
- 1 c. finely grated Cheddar cheese
- Combine broth and cornstarch.
- Cook until thick and clear. Add chicken.
- Place remaining ingredients in individual bowls. Have guests build their own stack in the following order:
- rice, chicken in gravy, tomatoes, peas, celery, green pepper, onions, pineapple, almonds, coconut, raisins, water chestnuts, noodles and cheese.
- Yields 6 to 8 servings.
