Savory Garlic Squash
- 3 zucchini cut into slices
- 3 scallop squash cut into slices
- 3 crookneck squash cut into slices
- 4 roma tomatoes cut into chunks
- 4 garlic cloves cut into small slices
- 1 bunch of green onions chopped along with some of the green stems.
- 3 Tablespoons Extra Virgin Olive oil
- 3 Tablespoons chopped fresh basil
- 1/2 teaspoon crushed fennel seeds
- 1 1/2 pounds sweet Italian sausage (optional)
- If you are going to add the sausage, cook if first. I like to cut it into good sized chunks and simmer in a little olive oil to coat the pan until done.
- Slice all of the squash, tomatoes, garlic cloves onions and fresh basil. Crush the fennel. Heat the olive oil in a large skillet and add all ingredients and simmer until squash is almost tender and then add the fresh basil and finish cooking.
