Sweat Potatoes
- t medium size sweet potatoes - light skin, peeled and sliced; 1/2 inch thick
- 2-3 Rome or Braeburn apples, core and sliced fairly thin, but not peeled
- 1 C. or so dark brown sugar
- 1 bag (Kraft) small marshmallows
- 1 stick unsalted butter
- Kosher salt
- Bake at 350 degrees for 25 - 30 minutes until nice and hot with puffed up marshmallows.
- In flat skillet on stove, add sliced apples, 1/2 stick butter and 1/2 c sugar. Cook on medium heat until apples are transparent. Feel free to add more butter or sugar if needed.
- Meanwhile, precook potatoes for about 5 minutes - salt water (be fairly generous as this is the one chance to season), drain and put on bottom of baking pan.
- When apples are ready, add with sugar / butter mixture on top of potatoes
- Distribute rest of sugar and butter (small pieces) over the potatoes and apples.
- Marshmallows go on top when ready to bake or add after 15 minutes of cooking
