Gold Rush Pork Chops
- 6 rib chops (have butcher make pockets for dressing)
- 1 c. chopped apples
- 1/2 c. chopped celery
- 1/4 c. chopped onion
- 3 Tbsp. shortening
- 1 tsp. poultry seasoning
- 1/2 tsp. salt
- dash of pepper
- 1/4 c. water
- 3 slices salt pork or bacon
- 1 lb. beef stew meat, in small pieces
- 2 large beef soup bones
- 1 lb. neck of lamb
- 1 tsp. salt
- 1 tsp. ground pepper
- 1/2 c. flour
- 2 yellow onions, peeled and chopped
- 5 c. beef stock
- 2 bay leaves
- 1 lb. carrots, in 2-inch pieces
- 8 potatoes, peeled and cut in thirds
- Crab is abundant in Puget Sound.
- A good day's outing was (still is!) to boat to a favorite crabbing spot.
