Mrs. Rotti'S Meatballs And Sauce
- Meatballs:
- white bread
- egg
- 6 or 7 sausages, half hot, half sweet'
- 2 cloves garlic
- olive oil
- oregano
- basil
- hot pepper flakes
- Sauce:
- Olive oil
- Tomato paste
- Garlic
- 2-3 large cans tomatoes
- sugar
- 1 or 2 chopped peppers
- 2-3 chopped onions
- To make the meatballs, soak 7 slices white bread in water, ring out.
- Fry the sweet and hot sausages in oil with a clove of garlic. Remove sausages from pan.
- Mix 1-2 pounds of ground beef with an egg, the bread, some hot pepper flakes and small amounts of oregano, basil, fresh chopped parsley, and a crushed garlic clove. Form meatballs, and fry in sausage pan.
- For sauce:
- In large heavy pot, heat olive oil, crushed clove garlic and one tbs tomato paste. cook, stirring, for 2-3 minutes. Add canned tomatoes, and spices, plus one teaspoon sugar.
- Add cut up peppers and onions. Add meatballs and sausages, pushing down into sauce.
- Bring to a boil, then lower to a simmer for 1 1/2 hours, partially covered. better if it sits in the fridge for a day. Can also be frozen.
